  • 200 g dark chocolate
  • 100 g brown sugar
  • 50 g granulated sugar
  • 3 eggs
  • 90 g all-purpose flour
  • Pinch of salt
  • 2 shots espresso
  • 250 g mascarpone cheese
  • 240 ml heavy cream

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8 or 9-inch baking tin with parchment paper.
  2. Melt chopped dark chocolate and butter in a microwave-safe bowl, stirring until smooth.
  3. Mix in brown sugar and granulated sugar until combined.
  4. Whisk in eggs one at a time until fully incorporated.
  5. Sift flour and salt over the mixture; fold gently until just combined.
  6. Pour batter into the prepared tin and bake for 25–30 minutes or until a toothpick comes out with moist crumbs.
  7. Once cooled, poke holes in the brownies and pour espresso over them to infuse flavor.
