  • 3 1/2 cups all-purpose flour (plus extra for dusting)
  • 1/2 teaspoon kosher salt
  • 1 quart peanut or vegetable oil (for frying)
  • 1 cup powdered sugar (for dusting)

Instructions

  1. Warm water and milk in a microwave-safe bowl for about 1.5 minutes until warm but not hot.
  2. Whisk in sugar and sprinkle yeast over the mixture; let sit for about 15 minutes until foamy.
  3. Stir in egg, salt, butter, and two cups of flour; mix until smooth and thick. Add remaining flour and blend until just combined.
  4. Dust a work surface with flour, turn dough out, and fold gently into a round. Place in an oiled bowl, cover with a towel, and let rise in a warm place until doubled (about 1-2 hours).
  5. Heat oil in a Dutch oven to 370°F.
  6. Roll out dough to about 17×11 inches; cut into squares (20–22 pieces).
  7. Fry beignets in batches until golden brown on both sides (about 1-2 minutes each). Drain on paper towels and dust with powdered sugar before serving.
