  • 2 cups shredded low moisture mozzarella
  • 2 tablespoons cream cheese
  • 2 eggs
  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • Olive oil and parsley for garnish

Instructions

  1. In a microwave-safe bowl, melt the mozzarella and cream cheese until smooth. Stir in eggs, almond flour, and baking powder until fully combined.
  2. Cover the mixture and refrigerate for at least 4 hours to enhance texture.
  3. After chilling, divide the dough into 8 equal portions. Flatten each between parchment paper to about ¼ inch thick.
  4. Preheat the oven to 350°F (175°C). Bake the flatbreads on a parchment-lined baking sheet for 15–17 minutes until golden brown.
  5. While baking, heat butter and olive oil in a pan; add garlic until fragrant. Brush baked flatbreads with garlic butter and serve hot.
