  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 2 and 1/2 cups all-purpose flour
  • 1 cup unsalted butter, cold & cubed
  • 1/4 cup cold water
  • 1 large egg (for egg wash)

Instructions

  1. Prepare the cherry filling: In a saucepan over medium heat, mix cherries, lemon juice, vanilla, sugar, cornstarch, and salt. Simmer for about 10 minutes until thickened. Remove from heat and let cool.
  2. Preheat the oven to 425°F. Butter a 9-inch pie plate.
  3. Make the dough: In a bowl, whisk flour and sugar together. Cut in butter until crumbly. Add cold water; mix until combined. Divide into two balls and chill for 30 minutes.
  4. Roll out the dough on a floured surface into discs larger than the pie plate.
  5. Transfer one disc to the pie plate, fill it with cooled cherry mixture, then cover with the second disc. Seal edges and cut slits for venting.
  6. Brush top crust with egg wash and bake on a rimmed baking sheet for about 60 minutes until golden brown.
