- 3/4 cup granulated sugar
- 1/4 cup cornstarch
- 2 and 1/2 cups all-purpose flour
- 1 cup unsalted butter, cold & cubed
- 1/4 cup cold water
- 1 large egg (for egg wash)
Instructions
- Prepare the cherry filling: In a saucepan over medium heat, mix cherries, lemon juice, vanilla, sugar, cornstarch, and salt. Simmer for about 10 minutes until thickened. Remove from heat and let cool.
- Preheat the oven to 425°F. Butter a 9-inch pie plate.
- Make the dough: In a bowl, whisk flour and sugar together. Cut in butter until crumbly. Add cold water; mix until combined. Divide into two balls and chill for 30 minutes.
- Roll out the dough on a floured surface into discs larger than the pie plate.
- Transfer one disc to the pie plate, fill it with cooled cherry mixture, then cover with the second disc. Seal edges and cut slits for venting.
- Brush top crust with egg wash and bake on a rimmed baking sheet for about 60 minutes until golden brown.
