  • 2 servings dry instant ramen noodles (about 140 g)
  • 1 cup water or vegetable broth
  • 57 tbsp soy sauce
  • 1.5 tsp dark soy sauce (optional for color)
  • 23 tbsp corn starch
  • 13 tbsp sugar (maple syrup or other liquid sweetener)
  • 2 tbsp rice vinegar (white vinegar or lemon juice)
  • 1/4 tsp ground pepper
  • 1/2 tbsp chili garlic sauce
  • 1 tbsp sesame oil
  • 10 oz extra firm tofu or veggies of choice (sliced)
  • 2 cloves garlic (minced, optional)
  • Chopped scallions (for topping)
  • Sesame seeds (for topping)

Instructions

  1. Mix all the sauce ingredients until well incorporated. Adjust the measurements based on your taste preferences. Set aside once well mixed.
  2. Boil water in a pot over high heat. Add your ramen noodles once it reaches a rolling boil.
  3. Cook the noodles until they are still chewy—about 2-3 minutes less than package instructions.
  4. Drain the noodles and run them under cold water to stop further cooking and remove excess starch.
  5. While the noodles are cooking, heat a frying pan over medium-high heat with a bit of oil. Sauté your chosen veggies, mushrooms, or tofu until cooked to your liking.
  6. Give the sauce a good mix again before pouring it into the pan with sautéed ingredients. Let it simmer for about 2-3 minutes until it starts to thicken.
  7. Once the sauce has thickened slightly, add in your cooked noodles. Mix well to ensure they are coated thoroughly with the sauce.
  8. Cook on medium-high heat for around 3 minutes until the noodles absorb some of that delicious sauce.
  9. Before serving, taste your dish and adjust seasonings as needed—adding more soy sauce, sweetener, or pepper if desired.
