- 2 servings dry instant ramen noodles (about 140 g)
- 1 cup water or vegetable broth
- 5–7 tbsp soy sauce
- 1.5 tsp dark soy sauce (optional for color)
- 2–3 tbsp corn starch
- 1–3 tbsp sugar (maple syrup or other liquid sweetener)
- 2 tbsp rice vinegar (white vinegar or lemon juice)
- 1/4 tsp ground pepper
- 1/2 tbsp chili garlic sauce
- 1 tbsp sesame oil
- 10 oz extra firm tofu or veggies of choice (sliced)
- 2 cloves garlic (minced, optional)
- Chopped scallions (for topping)
- Sesame seeds (for topping)
Instructions
- Mix all the sauce ingredients until well incorporated. Adjust the measurements based on your taste preferences. Set aside once well mixed.
- Boil water in a pot over high heat. Add your ramen noodles once it reaches a rolling boil.
- Cook the noodles until they are still chewy—about 2-3 minutes less than package instructions.
- Drain the noodles and run them under cold water to stop further cooking and remove excess starch.
- While the noodles are cooking, heat a frying pan over medium-high heat with a bit of oil. Sauté your chosen veggies, mushrooms, or tofu until cooked to your liking.
- Give the sauce a good mix again before pouring it into the pan with sautéed ingredients. Let it simmer for about 2-3 minutes until it starts to thicken.
- Once the sauce has thickened slightly, add in your cooked noodles. Mix well to ensure they are coated thoroughly with the sauce.
- Cook on medium-high heat for around 3 minutes until the noodles absorb some of that delicious sauce.
- Before serving, taste your dish and adjust seasonings as needed—adding more soy sauce, sweetener, or pepper if desired.
