Ingredients
- 1 lb dry navy beans (soaked overnight)
- 12 oz applewood smoked bacon (chopped)
- 1 sweet onion (chopped)
- 3 cloves garlic (minced)
- 2 cups chicken stock
- 1 cup bourbon (or additional chicken stock)
- 3/4 cup BBQ sauce
- 1/4 cup ketchup
- 2 tablespoons molasses
- 3 tablespoons pure maple syrup
- 1/2 cup brown sugar
- 1/2 teaspoon smoked paprika
- 1/8 teaspoon ground cumin
Instructions
- Soak the navy beans overnight in water. Drain and rinse them before use.
- In a skillet, cook the chopped bacon until crispy. Remove and drain on paper towels.
- Sauté onions in the bacon grease until caramelized; add minced garlic and cook briefly.
- In a large pot, combine chicken stock, bourbon, BBQ sauce, ketchup, molasses, maple syrup, brown sugar, smoked paprika, and cumin. Bring to a boil.
- Add soaked beans to the pot and bring back to a boil before transferring everything to the crockpot.
- Stir in cooked bacon, onions, and garlic into the crockpot. Cook on high for 5-6 hours or low for 10-12 hours.
- Let sit on warm for an additional hour to thicken before serving.
