  • 1 can pinto beans (15 oz), drained
  • 1 can black beans (15 oz), drained
  • 1 can fire-roasted tomatoes (15 oz), with juice
  • 1 can tomato paste (6 oz)
  • 1 jalapeño, seeded and minced (optional)
  • 2 cups beef stock
  • 1 tablespoon dried oregano
  • 2 teaspoons ground cumin
  • 1 tablespoon cocoa powder
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 1 ½ teaspoons smoked paprika
  • 1/2 teaspoon ground coriander
  • 1 tablespoon chili powder
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon garlic, minced
  • Sour cream
  • Cilantro, chopped
  • Shredded cheese

Instructions

  1. Cook chopped bacon in a large pot over medium heat until crisp; set aside.
  2. Sauté chopped onion and bell pepper in the bacon fat until tender.
  3. Add ground beef to the pot; cook until browned and drain excess grease.
  4. Stir in remaining ingredients including beans and spices along with some reserved bacon.
  5. Simmer on low heat for at least 45 minutes to meld flavors.
