  • 3 Tbsp sherry vinegar
  • 3 Tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp freshly cracked black pepper
  • 1/2 watermelon, divided (approx. 9 cups)
  • 1 cucumber, seeded and diced, divided
  • 1 red bell pepper, seeded and chopped, divided
  • 3 roma tomatoes, seeded and diced, divided
  • 1/4 red onion, diced
  • 1 jalapeño, seeded and diced small
  • 1 Tbsp basil, minced
  • 1 Tbsp parsley, minced

Instructions

  1. In a mixing bowl, whisk together sherry vinegar, olive oil, salt, and pepper.
  2. In a blender, combine 4.5 cups of diced watermelon, half of the cucumber, half of the red bell pepper, two diced roma tomatoes, and diced red onion. Blend until smooth while slowly adding in the vinegar mixture.
  3. Pour the blended mixture into a large container and stir in the remaining diced watermelon, cucumber, bell pepper, one seeded roma tomato, jalapeño, and minced herbs.
  4. Drizzle with olive oil and add salt and pepper to taste before serving chilled.
