  • 1 cup salted butter (room temperature)
  • 1 cup powdered sugar
  • 2 cups all-purpose flour
  • 1 teaspoon pure vanilla extract
  • 6 tablespoons salted butter (for caramel)
  • 1 cup granulated sugar
  • ½ cup light corn syrup
  • 1 cup heavy whipping cream (divided)
  • 1 ¼ cups milk or dark chocolate

Instructions

  1. Preheat oven to 350°F (175°C). Cream together butter and powdered sugar until fluffy. Mix in flour and vanilla.
  2. Press dough into a greased 9×13 inch pan. Bake for about 20 minutes until golden.
  3. For caramel, melt butter in a saucepan over medium heat. Stir in salt, corn syrup, sugar, and half the cream. Boil without stirring until slightly thickened (about 5 minutes). Remove from heat and add vanilla.
  4. Pour caramel over the baked shortbread base and spread evenly.
  5. Melt remaining cream with chocolate in a saucepan until smooth. Pour over caramel layer.
  6. Chill for at least 4 hours, then cut into bars.
