  • ¼ teaspoon cayenne pepper
  • ¼ cup masa harina
  • 15 oz kidney beans (drained and rinsed)
  • 15 oz pinto beans (drained and rinsed)
  • 14.5 oz diced tomatoes with juice (for Instant Pot version)
  • Optional toppings: shredded cheddar cheese, lime wedges, sour cream, tortilla chips or Fritos, diced green onions

Instructions

  1. In a large pot over medium heat, cook the ground beef until browned; drain excess grease.
  2. Stir in diced garlic and tomato sauce; cook for 1 minute until fragrant.
  3. Add chili powder, cumin, and other spices; reduce heat and let simmer for 1 hour.
  4. Mix masa harina with water until smooth, then stir into the chili to adjust thickness.
  5. Add kidney and pinto beans; simmer for an additional 10 minutes.
  6. Serve hot with optional garnishes.
