- 1 1/2 cups vegan butter, softened (baking sticks, not the tub)
- 4–5 cups powdered sugar
- 2 teaspoons pure vanilla extract
- 1/4–1/2 cup unsweetened soy milk (or almond)
Instructions
- Preheat the oven to 350°F (175°C) and prepare your baking pan.
- In a mixing bowl, combine soy milk and apple cider vinegar; let sit for 5 minutes.
- Add canola oil, applesauce, and vanilla extract; whisk until smooth.
- In another bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Gradually mix dry ingredients into wet ingredients until just combined.
- Stir in boiling water carefully until the batter is smooth.
- Pour batter into prepared pan and bake for about 35 minutes or until a toothpick comes out clean.
