  • 2/3 cup unsweetened applesauce
  • 1 tablespoon pure vanilla extract
  • 1 cup boiling water
  • 1 1/2 cups vegan butter, softened (baking sticks, not the tub)
  • 45 cups powdered sugar
  • 2 teaspoons pure vanilla extract
  • 1/41/2 cup unsweetened soy milk (or almond)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare your baking pan.
  2. In a mixing bowl, combine soy milk and apple cider vinegar; let sit for 5 minutes.
  3. Add canola oil, applesauce, and vanilla extract; whisk until smooth.
  4. In another bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  5. Gradually mix dry ingredients into wet ingredients until just combined.
  6. Stir in boiling water carefully until the batter is smooth.
  7. Pour batter into prepared pan and bake for about 35 minutes or until a toothpick comes out clean.
  8. Let cool before frosting as desired.
