  • 10 oz ground chicken
  • ¼ cup Tamari (low sodium)
  • 2 Tablespoon Thai sweet red chili sauce
  • juice of 1 lime
  • 1 teaspoon maple syrup
  • ⅓ cup cashews (chopped)
  • ¼ cup scallions (chopped)
  • ¼ cup cilantro (fresh, chopped)
  • ¼½ cup carrots (shredded)
  • Sesame seeds for topping
  • 1 head butter lettuce (leaves removed)

Instructions

  1. Heat sesame oil in a non-stick skillet over medium-high heat. Add diced onion and sauté until translucent.
  2. Stir in minced garlic and ginger; cook for an additional 2 minutes.
  3. Add ground chicken, breaking it up with a spatula. Season with salt and pepper; cook until no pink remains.
  4. In a small bowl, mix together tamari, Thai chili sauce, lime juice, and maple syrup. Pour over the chicken mixture along with chopped cashews; stir well.
  5. After two minutes on low heat, stir in shredded carrots, scallions, and cilantro.
  6. Spoon the mixture into butter lettuce leaves; serve immediately.
