  • 3 Ancho chilies
  • 4 lbs boneless beef chuck
  • 1 extra-large yellow onion
  • 1 red bell pepper
  • 2 cups tomato purée
  • 2 tablespoons olive oil
  • Salt and black pepper
  • 26 jalapeños (optional)
  • 4 garlic cloves
  • 1 tablespoon ground cumin
  • 2 teaspoons paprika
  • 1 ½ teaspoons ground coriander
  • ½ teaspoon allspice
  • 2 teaspoons Mexican oregano
  • 2 teaspoons unsweetened cocoa powder
  • 3 cups low-sodium chicken broth

Instructions

  1. Toast and blend the chilies: Heat a large pot over medium heat, toast the chilies for 2 minutes on each side, then steep in chicken broth for 5-10 minutes. Blend until smooth.
  2. Sear the beef: In the same pot, heat olive oil and sear seasoned beef cubes in batches until browned; set aside.
  3. Sauté vegetables: Cook onion, bell pepper, and optional jalapeños until soft. Add garlic and spices; cook until fragrant.
  4. Simmer the chili: Stir in tomato purée and blended chile mixture; return beef to pot. Simmer on low for 2-3 hours until tender.
