  • 1/2 onion (diced)
  • 2 cloves garlic (minced)
  • 1 1/2 lbs ground beef (or turkey)
  • 1 packet taco seasoning
  • 10 oz diced tomatoes with green chiles
  • 1 1/2 cups beef broth
  • 3 oz cream cheese (softened)
  • 12 oz spaghetti (cooked al dente)
  • 1 1/2 cups shredded cheese

Instructions

  1. Cook spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat and sauté the diced onion until soft, about 3-4 minutes. Add minced garlic and cook for an additional minute.
  3. Add ground beef to the skillet; cook until browned, about 5-7 minutes. Drain excess fat.
  4. Stir in taco seasoning, diced tomatoes, beef broth, and softened cream cheese; cook until cream cheese melts into the mixture.
  5. Remove from heat; toss cooked spaghetti with meat mixture and shredded cheese until well combined.
  6. Serve immediately, garnished with cilantro if desired.
