  • 2 pounds chicken breast
  • 1 cup pineapple chunks
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1 tablespoon minced garlic
  • 1 tablespoon grated ginger
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Place chicken breasts in the bottom of the crockpot.
  2. Add pineapple chunks on top of the chicken.
  3. In a mixing bowl, whisk together soy sauce, brown sugar, apple cider vinegar, minced garlic, grated ginger, and red pepper flakes until well combined.
  4. Pour the sauce over the chicken and pineapple ensuring even coverage.
  5. Cover and cook on low for 4 to 6 hours until chicken is fully cooked and tender.
  6. Remove chicken, shred with two forks, and return to the crockpot.
  7. Mix cornstarch with water in a small bowl until smooth; stir into the sauce in the crockpot.
  8. Cook on high for an additional 10 to 15 minutes to thicken the sauce.
  9. Serve warm over rice or alongside your favorite sides.
