Instructions

  1. Marinate chicken thighs in lime juice, avocado oil, chili powder, garlic powder, salt, and pepper for 15-30 minutes.
  2. Cook marinated chicken in a skillet over medium-high heat for 8-10 minutes per side until golden brown and cooked through.
  3. Prepare street corn topping by mixing grilled corn kernels with red onion, sour cream, mayonnaise, Cotija cheese, chili powder, salt, pepper, and lime juice.
  4. Reheat cooked rice until warm.
  5. Assemble bowls with rice as the base topped with chicken slices and street corn mixture. Garnish with additional Cotija cheese and cilantro.
