  • ½ cup powdered sugar
  • 1 cup cold butter
  • ½ cup granulated sugar
  • 1 cup brown sugar (packed)
  • 2 eggs
  • 3 ⅔ cups gluten-free flour or all-purpose flour
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • ⅓ cup finely diced strawberries
  • Pinch of sea salt (optional)

Instructions

  1. In a stand mixer, beat softened cream cheese and powdered sugar until creamy.
  2. Scoop teaspoon-sized balls of the cream cheese mixture onto a parchment-lined baking pan and freeze.
  3. Beat cold butter with granulated and brown sugars until smooth.
  4. Add eggs and mix well, then incorporate dry ingredients until a thick dough forms.
  5. Fold in diced strawberries and chill dough for 30 minutes.
  6. Preheat oven to 350°F. Form cookie dough balls, create indents, and place frozen cream cheese balls inside each indent.
  7. Seal the dough around the filling and space on a baking sheet.
  8. Bake for 11-12 minutes until just set in the center.
  9. Cool on the pan for 10 minutes before transferring to a wire rack.
