  • 3 large chicken breasts
  • 2 tablespoons olive oil
  • 2 small heads broccoli, chopped
  • 1/2 cup soy sauce
  • 1/2 cup honey
  • 1/4 cup rice vinegar
  • 3 cloves garlic, minced
  • 2 tablespoons sriracha
  • 2 teaspoons sesame oil
  • 1 teaspoon ground ginger
  • 2 teaspoons arrowroot powder mixed with 2 tablespoons water
  • 1/2 cup mayonnaise
  • 23 tablespoons water

Instructions

  1. Cook the rice according to package instructions; set aside.
  2. Steam chopped broccoli until fork-tender; set aside.
  3. Cut chicken into bite-sized pieces and toss with olive oil and spices until evenly coated.
  4. Preheat air fryer to 400°F; cook chicken for about 12 minutes or until internal temperature reaches 160°F.
  5. In a saucepan, combine sticky sauce ingredients and bring to a boil; thicken with arrowroot slurry.
  6. Mix spicy mayo ingredients together.
  7. Assemble bowls: layer rice, broccoli, chicken, drizzle with sticky sauce and spicy mayo.
