  • 2 tablespoons canola or vegetable oil

  • 2 tablespoons coconut oil
  • 1 cup thinly sliced shallots
  • 2 tablespoons minced ginger
  • 1 cup full-fat canned coconut milk
  • 3 to 4 tablespoons sambal oelek
  • 4 teaspoons red curry paste
  • 1 1/2 teaspoons coconut or brown sugar
  • 1 teaspoon ground coriander (optional)
  • 1 teaspoon Diamond Crystal kosher salt
  • Scallions (for garnish)
  • Red pepper flakes (for garnish)
  • Toasted sesame seeds (for garnish)

Instructions

  1. Prepare the Tofu: Drain and press the tofu to remove excess moisture. Cut into 1-inch cubes.
  2. Pan Fry the Tofu: Heat oil in a non-stick pan over medium-high heat. Fry tofu cubes until golden brown on all sides, seasoning with salt.
  3. Cook the Sauce: In a skillet, sauté shallots until softened, then add ginger and cook briefly. Stir in coconut milk, sambal oelek, red curry paste, sugar, and salt; let simmer.
