  • 8 grams salt

  2. Gradually add flour and mix until incorporated. Let rest for 30 minutes.
  3. Perform four sets of stretch and folds every 20 minutes.
  4. Allow the dough to bulk ferment for 3–4 hours or until it nearly doubles in size.
  5. Shape the dough into a tight ball and place it seam-side up in a floured banneton basket. Let rise for an additional 2 hours.
  6. Preheat your oven to 460°F (238°C) with a Dutch oven inside.
  7. Score the dough and bake covered for 30 minutes; then uncovered for an additional 10 minutes.
  8. Cool on a rack before slicing.
