  • 410 grams all-purpose flour
  • 290 grams water
  • 160 grams sourdough starter
  • 8 grams salt

Instructions

  1. In a large bowl, mix water, sourdough starter, and salt until combined. Gradually add flour and mix until fully incorporated. Cover and let rest for 30 minutes.
  2. Perform stretch and folds: Grab the dough edges, stretch upward, and fold under. Rotate the bowl 90° and repeat until you've done this four times. Let rest for 20 minutes between each set, completing four sets total over one hour.
  3. Cover the dough and let it rise at room temperature for 3–4 hours or until nearly doubled.
  4. Shape the dough into a tight ball on a floured surface and place it seam-side up in a floured banneton basket. Let it rise for another 2 hours.
  5. Preheat your oven to 460°F (238°C) with a Dutch oven inside during the final proofing hour.
  6. Transfer the dough onto parchment paper, score with a knife, then place it in the preheated Dutch oven. Bake covered for 30 minutes, then uncovered for another 10 minutes at 440°F (227°C) until golden brown.
  7. Cool on a rack for at least an hour before slicing.
