- 1 Tbsp chipotle pepper in adobo
- 4 large tortillas
- 1 cup uncooked rice
- 1 small red bell pepper
- 1 jalapeño
- ½ red onion, sliced
- 3 garlic cloves, minced
- 1 tsp olive oil (to sauté the veggies)
- ¾ cup thawed or fresh corn kernels
- 1 cup black beans, drained and rinsed
- ¼ cup cotija cheese
- ⅓ cup sour cream
- 1½ Tbsp honey
- ½–1 Tbsp chipotle peppers in adobo
- 1 Tbsp lime juice
- 3 Tbsp fresh cilantro, chopped
- 1–2 Tbsp water
- ¼ tsp salt
Instructions
- Marinate diced chicken in lime juice and spices for at least 15 minutes.
- Cook rice according to package instructions.
- In a skillet over medium heat, sauté marinated chicken until cooked through (about 12-15 minutes).
- Sauté chopped bell pepper and onion in the same skillet; add minced garlic last.
- Assemble wraps with rice, chicken, veggies, beans, corn, cheese, and drizzle with sauce.
- Roll tightly into burritos and serve warm.
