  • 4 large tortillas
  • 1 cup uncooked rice
  • ½ red onion, sliced
  • ¾ cup corn kernels
  • 1 cup black beans
  • Cotija cheese
  • Sour cream

Instructions

  1. Marinate diced chicken in lime juice, olive oil, and spices for at least 15 minutes.
  2. Cook rice according to package instructions while marinating.
  3. Sauté marinated chicken in a skillet over medium heat for 12–15 minutes until browned.
  4. In the same skillet, sauté sliced onion and peppers until tender; add minced garlic briefly before combining with chicken.
  5. Assemble each tortilla with rice, chicken mixture, black beans, corn, cheese, and sauce.
  6. Roll tightly and serve immediately.
