- 200 grams (about ¾ cup) sourdough discard (unfed, at room temperature)
- 1 egg (lightly beaten)
- 2 Tablespoons unsalted butter (melted)
- Fresh parsley or rosemary (chopped)
- Garlic powder
- Flaky sea salt (for topping)
Instructions
- In a stand mixer bowl, combine warmed milk, instant yeast, and sugar. Add flour, sourdough discard, beaten egg, herbs, salt, and garlic powder. Mix in melted butter until a shaggy dough forms.
- Knead the dough on a work surface for 3–4 minutes until smooth and slightly tacky.
- Place in a greased bowl, cover with plastic wrap, and let rise until doubled in size (60–90 minutes).
- Combine softened butter with herbs and garlic powder for topping.
- Divide risen dough into 12 equal pieces; flatten and fill with butter mixture before placing them in a greased loaf pan.
- Let rise again for another 30–45 minutes.
- Preheat oven to 350℉ and bake for approximately 30–40 minutes until golden brown.
