  • 12 full-size graham crackers
  • 2 tablespoons granulated sugar
  • 6 tablespoons unsalted butter (melted)
  • ½ cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • ½ cup bittersweet chocolate chips
  • 2 cups mini marshmallows

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8 inch baking pan and line it with parchment paper.
  2. In a food processor, crush graham crackers with sugar until fine crumbs form. Mix in melted butter and press into the bottom of the prepared pan.
  3. Bake the crust for 15-20 minutes until golden brown; let cool slightly.
  4. In a bowl, whisk together vegetable oil, sugar, eggs, and vanilla until combined. Add cocoa powder, flour, salt, and baking powder; mix until smooth.
  5. Fold in chocolate chips and pour over the cooled crust. Bake for 30-40 minutes until set.
  6. Remove from oven, sprinkle mini marshmallows on top, and broil for about 2 minutes until toasted.
  7. Let cool for at least 30 minutes before cutting into squares.
