  • 5 cloves garlic
  • 3 mixed peppers
  • 500 g sweet potatoes
  • 6 salad tomatoes
  • 500 g large carrots
  • Fresh rosemary
  • Dried sage
  • Italian herbs
  • Single cream
  • Vegetable stock
  • Extra virgin olive oil
  • Salt
  • Pepper

Instructions

  1. Preheat oven to 200°C (400°F).
  2. In a bowl, combine chopped onions, garlic (skin on), peppers, sweet potatoes, tomatoes, and carrots. Drizzle with olive oil and season.
  3. Spread the mixture on a baking sheet and roast for 30-35 minutes until caramelized.
  4. Transfer roasted veggies to a pot, add remaining rosemary, stock, cream, sage, and herbs. Blend until smooth.
  5. Simmer for about 10 minutes over medium heat before serving hot.
