Ingredients

  • 2 tablespoons avocado oil
  • 1 medium sweet potato, diced
  • 8 oz chicken breast, cubed
  • 2 cups kale leaves
  • 2 cups cooked brown rice
  • Crumbled feta cheese (optional)
  • Creamy chipotle sauce (Greek yogurt, mayonnaise, chipotle sauce)

Instructions

  1. Preheat oven to 400°F.
  2. Toss diced sweet potatoes with 1 tablespoon avocado oil and half of the seasoning blend; roast on a baking sheet for 10 minutes.
  3. While they roast, season chicken with remaining oil and seasoning blend; add to baking sheet after 10 minutes of roasting sweet potatoes.
  4. Roast both for another 15 minutes until chicken is cooked through and sweet potatoes are tender.
  5. Massage kale with olive oil and lemon juice until softened.
  6. Combine sauce ingredients in a bowl until smooth.
  7. Assemble bowls by layering cooked rice, kale, roasted chicken, sweet potatoes, sliced avocado, feta cheese, and drizzle with chipotle sauce.
