  • 2 chicken breasts (500g total)
  • 35g plain flour
  • 2 eggs
  • Spices: paprika, salt, garlic powder, onion powder, oregano, black pepper, cayenne pepper
  • 5 tbsp full-fat mayonnaise
  • 3 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 tbsp classic yellow mustard
  • 1 tsp apple cider vinegar
  • 1/8 tsp onion powder
  • 1/8 tsp garlic powder

Instructions

  1. Make the Honey Mustard Sauce by mixing all sauce ingredients in a bowl; adjust taste as desired.
  2. Crush pretzels in a food processor until coarse crumbs form.
  3. Set up three shallow dishes for dredging: one with flour, one with beaten eggs, and one with crushed pretzels mixed with spices.
  4. Slice chicken breasts into cutlets and dredge in flour first, then dip in egg and coat with pretzel crumbs.
  5. Heat oil in a heavy-based pan to 180°C (350°F) and fry cutlets for 3–4 minutes per side until golden brown.
  6. Serve hot topped with flaky sea salt and chives alongside honey mustard sauce.
