Ingredients
- 1 cup unsalted butter (room temperature)
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup granulated sugar (for crust)
- 1/2 pint fresh raspberries (or 1 cup frozen, thawed)
- 2 1/4 cups granulated sugar (for filling)
- 6 tablespoons all-purpose flour (for filling)
- 6 eggs
- Juice from 3 lemons
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9" x 13" baking pan and line it with parchment paper.
- For the crust: Combine butter, flour, salt, and sugar in a bowl until smooth. Press into the bottom of the baking pan and bake for 15–20 minutes until golden.
- For the filling: Blend raspberries with water to make puree. Strain to remove seeds. In another bowl, mix sugar and flour; whisk in eggs and lemon juice. Gradually add raspberry puree until light pink.
- Pour filling over the crust and bake for an additional 25–30 minutes until edges are set but center is slightly wobbly.
- Cool completely before slicing into triangles.
