  • 3 oz shiitake mushrooms, diced
  • 3 scallions, sliced
  • 1 head of romaine lettuce
  • 1/4 cup hoisin sauce
  • 1 tbsp low-sodium soy sauce
  • 1 tbsp regular soy sauce
  • 1 tbsp rice vinegar
  • 1/2 tbsp sesame oil
  • 2 tsp fresh grated ginger
  • 3 garlic cloves, minced
  • 1 shallot, diced

Instructions

  1. In a small bowl, whisk together hoisin sauce, soy sauces, rice vinegar, sesame oil, ginger, garlic, and shallot until smooth.
  2. Heat sesame oil in a large skillet over medium-high heat. Add ground chicken and cook until browned.
  3. Stir in water chestnuts and mushrooms; cook for a few minutes.
  4. Pour sauce over the chicken mixture and stir well. Cover and let simmer for a few minutes.
  5. Serve by spooning the mixture into washed romaine lettuce leaves and garnish with scallions.
