  • 1 lb boneless, skinless chicken thighs (sliced)
  • ½ cup sun-dried tomatoes (chopped)
  • 1 lb asparagus (trimmed and halved)
  • ¼ cup basil pesto
  • 1 cup cherry tomatoes (halved)
  • 1 cup tortellini (uncooked)
  • Salt to taste
  • Fresh parsley (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season sliced chicken with salt and add to the skillet along with sun-dried tomatoes. Cook for about 5-10 minutes until fully cooked.
  2. Remove the chicken and tomatoes but keep the oil in the skillet. Add asparagus, season with salt, and cook for another 5-10 minutes until tender yet crisp.
  3. While cooking the asparagus, prepare tortellini according to package instructions. Drain and set aside.
  4. Return chicken to the skillet with basil pesto, stirring to coat evenly. Heat for another minute before adding cooked tortellini and cherry tomatoes; mix gently.
  5. Serve warm garnished with fresh parsley.
