  • Kosher salt
  • 2 tablespoons olive oil
  • 3 tablespoons cracked black peppercorns
  • 1/4 cup finely chopped shallots
  • 1/4 cup cognac
  • 1 cup beef broth
  • 1/4 cup heavy cream
  • 1/4 cup finely chopped parsley

Instructions

  2. Heat olive oil in a cast iron skillet until smoking. Sear the steaks for at least 4 minutes on each side, checking doneness with a meat thermometer.
