  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 46 garlic cloves, minced
  • 1 can crushed tomatoes (28 oz.)
  • 1 can fire-roasted diced tomatoes (14.5 oz.)
  • 3/4 cup uncooked long grain white rice
  • 6 cups low sodium beef broth
  • Freshly grated Parmesan cheese and mozzarella for serving

Instructions

  1. In a large soup pot or Dutch oven over medium-high heat, brown the sausage with onions for about 4 minutes.
  2. Stir in bell peppers, garlic, and red pepper flakes; sauté until softened.
  3. Add crushed tomatoes, diced tomatoes, rice, broth, and herbs; mix well.
  4. Bring to a boil then reduce heat to low; cover and simmer for about 12 minutes until rice is tender.
