  • 12 tablespoons light agave nectar (or sweetener of choice)
  • 1 1/2 teaspoons pure vanilla extract
  • 2 cups peaches (sliced)
  • 1/2 cup fresh blueberries
  • Vegan butter (for brushing)

Instructions

  1. Thaw puff pastry at room temperature for 30-40 minutes and soften cream cheese.
  2. Preheat oven to 400ºF and line a baking sheet with parchment paper.
  3. Beat cream cheese with agave nectar and vanilla until smooth.
  4. Roll out puff pastry into a rectangle, trace a border, prick the center with a fork, brush the border with melted vegan butter, and sprinkle with sugar.
