  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup jelly (grape or strawberry)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually incorporate into the wet mixture until a smooth dough forms.
  5. Scoop two tablespoons of dough, flatten it into a disc on the baking sheet, place about one teaspoon of jelly in the center, and top with another dough disc. Press edges to seal.
  6. Use a fork to create decorative edges before baking for 12–15 minutes until golden brown.
  7. Allow cookies to cool on the baking sheet for five minutes before transferring them to a wire rack.
