Ingredients

Instructions
- In a medium pot, heat about 3 inches of water to a simmer. Combine egg whites and powdered sugar in a heat-safe bowl and whisk briefly.
- Place the bowl over the simmering pot without touching the water. Whisk until sugar dissolves (113°F).
- Transfer the bowl to a stand mixer and whip on high for about 5 minutes until thick (medium-soft peaks form).
- Add flavoring and mix briefly. Pipe onto lined baking trays.
- Bake at 200°F for around 80 minutes until crisp throughout, rotating trays every 20 minutes.
- Allow cooling before decorating.
