  • 64 ounces Italian dressing
  • 32 ounces mozzarella cheese, cubed
  • 40 ounces cherry tomatoes, halved
  • 3 green bell peppers, diced
  • 3 red bell peppers, diced
  • 36 ounces sliced black olives

Instructions

  1. Cook the rotini pasta in a large pot of salted boiling water until al dente. Drain and rinse under cold water.
  2. In a large mixing bowl, combine half of the cooked pasta with half of the Italian dressing; season with salt and pepper.
  3. Add half of the mozzarella cheese, cherry tomatoes, diced bell peppers, and sliced olives; stir gently to combine.
  4. In another bowl (or the same one after cleaning), repeat steps 2 and 3 with remaining ingredients.
  5. Transfer to large foil pans, cover tightly with foil, and refrigerate for at least 24 hours before serving.
