  • 1 tablespoon olive oil
  • 2 medium carrots, diced
  • 1 large onion, diced
  • 1 stalk celery, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 carton (32 oz) chicken broth
  • 1 can (15 oz) Great Northern beans, drained and rinsed
  • 1 cup ditalini pasta
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt (adjust to taste)
  • 1 teaspoon black pepper (adjust to taste)
  • 2 tablespoons fresh basil, chopped (optional)

Instructions

  1. In a large pot or Dutch oven over medium heat, heat the olive oil and cook the ground beef until browned (3–5 minutes). Drain excess fat.
  2. Add diced carrots, onion, celery, and garlic; sauté for about 4 minutes until softened.
  3. Return beef to the pot; stir in diced tomatoes and tomato sauce.
  4. Add Great Northern beans and chicken broth; simmer for about 10 minutes.
  5. Stir in ditalini pasta along with Italian seasoning, salt, and pepper; cook until pasta is tender (about 10 minutes).
  6. Serve hot garnished with fresh basil or Parmesan cheese.
