- 2 scant cups long-grain white rice (preferred: Lundberg White Jasmine Rice)
- 8 cups chicken stock
- 2 chicken breasts (~1 lb), cut into bite-sized pieces
- Seasoned salt and pepper, to taste
- Fresh parsley for garnish
Instructions
- In a large soup pot, melt 2 tablespoons of butter over medium heat. Add shredded carrots, season with salt and pepper, cover, and cook for about 5-6 minutes until tender.
- Stir in the rice, dried onion, and garlic; sauté for 1 minute.
- Pour in the chicken stock, increase heat to high, stirring occasionally until boiling.
- Reduce heat to medium-low; simmer for 15 minutes while stirring occasionally.
- Add the seasoned chicken pieces; simmer for an additional 7-10 minutes until cooked through.
- Stir in remaining butter and adjust seasoning as needed. Let sit for 5 minutes before serving.
