- 6 chicken thighs

- 1 cup chopped onion
- 3 cups low sodium chicken stock
- Olive oil, butter, salt, and pepper
Instructions
- Combine smoked paprika, mixed herbs, garlic powder, onion powder, salt, and pepper in a bowl. Rinse basmati rice until water runs clear; set aside.
- Season chicken thighs with most of the spice mixture.
- Heat olive oil in a large pot over medium-high heat and sear chicken thighs until golden brown (about 3 minutes per side). Remove and set aside.
