  • 4 skinless boneless chicken thighs
  • 2 tbsp chipotle paste
  • 2 tbsp honey
  • 1 1/2 tsp tomato puree
  • 1 tsp salt
  • 2 large garlic cloves
  • 200g fresh pineapple chunks
  • 1 small shallot
  • juice 1 lime, plus extra wedges for serving
  • small handful fresh coriander, roughly chopped
  • 1 ripe avocado, cubed
  • 8 small corn or flour tortillas

Instructions

  1. Preheat oven to 200°C (400°F).
  2. In a medium bowl, whisk together chipotle paste, honey, tomato puree, salt, and minced garlic.
  3. Cut chicken into bite-sized pieces, toss in marinade, and set aside.
  4. Spread marinated chicken and pineapple on a baking tray.
  5. Roast for about 30 minutes until chicken is cooked through and golden.
  6. While roasting, prepare shallot and avocado.
  7. Squeeze lime juice over the roasted mixture before serving.
  8. Serve with warm tortillas and desired toppings.
