  • Salt and pepper, to taste
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • Juice of 1 lime

Instructions

  1. Dice chicken into bite-sized pieces and season with salt, cumin, chili powder, and garlic powder. Chop onion and bell pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Cook the chicken until golden brown (5-7 minutes).
  3. Add onion and bell pepper to the skillet; sauté until tender (3-4 minutes).
  4. Stir in rice, black beans, and corn. Pour in 1.5 cups of water or broth; bring to a boil.
  5. Reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked through.
  6. Fluff rice gently with a fork; squeeze fresh lime juice on top and garnish with chopped cilantro before serving.
