  • 1/3 cup balsamic vinegar
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 8 oz grape tomatoes
  • 8 oz fresh mozzarella balls
  • Fresh basil (for garnish)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F.
  2. In a bowl, whisk together balsamic vinegar, honey, olive oil, minced garlic, salt, and pepper to create the sauce.
  3. Toss grape tomatoes and mozzarella balls with salt and pepper in another bowl.
  4. Heat olive oil in a large oven-safe skillet over medium-high heat. Season chicken breasts with salt and pepper; sear until golden brown on both sides (about 5-7 minutes each).
  5. Pour the balsamic sauce over the chicken and simmer briefly. Add the tomato mixture on top of the chicken.
  6. Transfer the skillet to the oven and bake uncovered for 18-23 minutes until chicken reaches an internal temperature of 165°F.
  7. Let rest for 5 minutes before serving and garnish with fresh basil.
