  • 2 tbsp vanilla extract
  • 2 tsp almond extract
  • 1 ⅓ cups ground almonds
  • 2 ½ cups all-purpose flour (or gluten-free)
  • 3 tsp baking powder
  • ¾ tsp baking soda
  • Sea salt
  • 1 cup raspberry jam

Instructions

  1. Preheat oven to 350°F and line two 8-inch cake pans with parchment paper.
  2. In a large bowl, whisk together sugar, melted butter, yogurt, vanilla, and almond extracts until smooth.
  3. Add ground almonds, flour, baking powder, baking soda, and salt; mix until just combined.
  4. Gradually stir in vegan buttermilk until the batter is smooth.
  5. Divide the batter between prepared pans; bake for 40–42 minutes or until a toothpick comes out clean.
  6. Cool cakes in pans for about 10 minutes before transferring to a cooling rack.
  7. Once cooled, slice each layer in half horizontally for four layers total.
  8. Prepare your vegan cream cheese frosting while cakes cool.
  9. Assemble the cake by layering frosting and raspberry jam between layers; finish with a crumb coat and chill before adding final frosting touches.
