- 4 oz cream cheese (softened)
- 2 Tbsp powdered sugar
- 1/3 cup pumpkin puree
- 2 cups graham cracker crumbs
- 1/2 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 2 cups white chocolate chips
- 1–2 tsp coconut oil (optional)
Instructions
- In a mixing bowl or electric mixer, beat the cream cheese and powdered sugar until smooth.
- Add pumpkin puree, 1 cup of graham cracker crumbs, pumpkin pie spice, and cinnamon. Mix until fully combined.
- Gradually add the remaining graham cracker crumbs and blend well.
- Cover and chill the mixture in the refrigerator for at least 30 minutes.
- Line a baking sheet with parchment paper. Shape chilled dough into balls and place on the sheet.
- Chill again for another 30 minutes.
- Melt white chocolate chips in a microwave-safe bowl; dip each pumpkin ball into the chocolate.
- Allow excess chocolate to drip off before returning them to the baking sheet.
- Drizzle leftover chocolate over each ball and add desired toppings.
- Chill again until hardened.
