Ingredients

  • 85 grams jelly crystals
  • 125 mls cream (thickened or heavy)
  • 12 Tiramisu sponge fingers
  • 1/2 cup port or juice (for non-alcoholic)
  • 1 1/2 cups custard
  • 400 grams assorted berries
  • 200 mls thickened cream
  • 1 teaspoon custard powder

Instructions

  1. Prepare the jelly according to package instructions and let it cool.
  2. Pour about 1 1/4 cups of jelly into six dessert dishes and refrigerate until partially set.
  3. Combine the remaining jelly with cream and beat until fluffy.
  4. Layer the jelly and cream mixture over the set jelly in each dish.
  5. Soak sponge fingers in port or juice and layer them on top.
  6. Add a layer of custard followed by fresh berries.
  7. Whip additional cream with custard powder to form stiff peaks and pipe onto each trifle.
  8. Garnish with remaining berries and mint leaves before serving.
