  • 3/4 cup unsalted butter, softened
  • 1 cup sugar
  • 1 whole egg
  • 1 egg yolk
  • 1 tbsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 8 oz cream cheese, softened
  • 1/4 cup sugar (for topping)
  • Assorted fresh fruit (for toppings)

Instructions

  1. In a stand mixer, combine softened butter and sugar until well mixed. Add the whole egg, egg yolk, and vanilla; mix until incorporated.
  2. Sift together all-purpose flour, salt, and baking powder in another bowl. Gradually add to the butter mixture on low speed until combined. Wrap dough in plastic wrap and refrigerate for at least one hour.
  3. Preheat oven to 350°F (175°C). Roll out the chilled dough to about 1/2 inch thick and cut into desired shapes using cookie cutters. Place on parchment-lined baking sheets and bake for 9–10 minutes or until edges are lightly browned.
  4. While cookies cool, beat together cream cheese, sugar, and vanilla until smooth.
  5. Once cookies are completely cool, spread cream cheese frosting over each cookie and top with an assortment of fresh fruit.
