Ingredients
- 2/3 cup sweetened condensed milk
- 1/4 cup unsalted butter
- 1/4 cup packed light brown sugar
- 2 Tbsp light corn syrup
- 1 tsp vanilla extract or vanilla bean paste
- 1/2 tsp fine salt
- 1/2 cup unsalted butter, room temperature
- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/4 tsp fine salt
- 1 1/2 cups granulated sugar
- 3/4 cup all-purpose flour
- 2/3 cup unsweetened cocoa powder, sifted
- 1/2 cup powdered sugar
- 1/2 cup dark chocolate chips, chopped
- 1/2 tsp fine salt
- 2 large eggs, room temperature
- 1/4 cup vegetable or canola oil
- 1/4 cup unsalted butter, melted
- 2 Tbsp water
- 1 tsp vanilla extract or vanilla bean paste
- 1/2 cup heavy whipping cream, room temperature
- 2/3 cup dark chocolate chips
- 2 Tbsp unsalted butter, room temperature
- 1 Tbsp light corn syrup – optional
- 1/4 tsp fine salt
- flakey sea salt – garnish
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking pan or line it with parchment paper.
- For the shortbread crust, beat together softened butter and powdered sugar until fluffy. Mix in flour and salt, then press into the prepared pan. Bake for 20 minutes until golden.
- In a saucepan over medium heat, combine sweetened condensed milk, butter, brown sugar, corn syrup, vanilla extract, and salt until smooth; pour over the cooled crust.
- Prepare the brownie batter by whisking sugar, cocoa powder, flour, dark chocolate chips, eggs, oil, melted butter, water, and vanilla extract until smooth; layer it over the caramel.
- Bake for another 20-25 minutes until a toothpick comes out slightly moist. Let cool.
- For the ganache layer, heat cream until simmering; stir in chocolate chips and butter until melted and smooth; pour over cooled brownies.
- Chill in the fridge for at least an hour before cutting into squares.
