  • 68 cups chicken broth (start with 6 cups)
  • 6 oz pasta (e.g., Italian small shells)
  • 1 cup heavy whipping cream
  • 1/21 cup grated Parmesan Reggiano cheese
  • 2 1/23 cups fresh spinach
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add diced chicken with seasoning; cook until browned (4–5 minutes).
  2. Stir in onions, carrots, celery, sundried tomatoes, and garlic; cook until vegetables are translucent (3–4 minutes).
  3. Sprinkle flour over the mixture; stir to combine. If using tomato paste, add it now.
  4. Gradually whisk in chicken broth while stirring to avoid lumps.
  5. Bring to a boil; add pasta and remaining seasoning. Cover and simmer for 20 minutes until chicken is cooked through.
