  • 1 cup dried red kidney beans (soaked overnight)
  • 1 tablespoon oil
  • 4 vegan sausages (sliced)
  • 1 medium onion (diced)
  • 2 stalks celery (diced)
  • 1 medium green bell pepper (diced)
  • 2 tablespoons Cajun seasoning
  • 5 cups vegetable stock
  • 2 bay leaves
  • 2 teaspoon fresh thyme
  • 3 cloves garlic (chopped)
  • 1 teaspoon apple cider vinegar (optional)
  • ½ teaspoon black pepper (or to taste)
  • Salt to taste
  • 1 cup long white grain rice

Instructions

  1. Heat oil in a large pot. Add sliced vegan sausage and brown.
  2. Stir in diced onion, celery, and bell pepper; cook until onions are translucent.
  3. Mix in Cajun seasoning, vegetable stock, garlic, bay leaves, and thyme.
  4. Drain and add soaked kidney beans. Season with black pepper and vinegar.
  5. Cover pot; simmer on medium heat for 1 to 1½ hours until beans are soft.
  6. Cook rice according to package instructions separately.
  7. Mash some beans against the pot’s side for thicker stew; simmer for an additional 5 minutes.
  8. Remove bay leaves and serve hot over rice.
